Stage: PROBLEM TO BE SOLVED: To provide a method for promoting fermentation of tea leaves so that the tea leaves are sufficiently fermented even when damage of cells of the tea leaves are reduced for maintaining shapes of the tea leaves for producing black tea.SOLUTION: A black tea producing method includes: a wilting step for wilting raw tea leaves; a tea leaf damaging step for damaging cells of the tea leaves after the wilting step; a static fermentation step for statically fermenting the tea leaves after the tea leaf damaging step; a temperature/humidity conditioning step for promoting fermentation of the tea leaves by heating the tea leaves after the static fermentation step under an atmosphere in which a temperature and humidity are conditioned; and a drying step for drying the tea leaves after the temperature/humidity conditioning step.
